Icebreakers : Fajitas
Serves 4 / Cooking time: 15 mins
Ingredients 4 chicken breast fillets (420g), cut into strips 2 cloves garlic, finely chopped Olive oil for frying ½ green pepper, cut into strips ½ red pepper, cut into strips ½ red onion, cut into strips 1 tsp chilli powder 8 fresh tortillas 125g sour cream
Ingredients Stir fry the chicken strips and garlic until cooked in a little olive oil. Add the vegetables, chilli powder and continue to stir fry for approx 3 minutes until vegetables are tender. Warm the tortillas in the oven, place a small amount of mixture in the centre of each wrap and top with a spoonful of sour cream. Fold the bottom of the tortilla upwards and fold both sides inwards to form the wrap. Serve immediately.
Serving suggestions:
Serve with fresh green salad and Blue Dorito chips.
