Choc chip
120g/4oz Siucra Light Golden Bron Sugar, 180g/6oz Odlums Cream Flour Pinch of salt, 90g/3oz butter, 1 egg, 120g/4oz plain chocolate chips
Instructions
It it important to use real chocolate and chocolate-flavoured cake covering. Cream butter and sugar until light and fluffy. Beat in egg, a little at a time. Sift the flour and salt and fold into mixture. Stir in chocolate chips.
Grease baking sheets and place teaspoons of the mixture well apart on the sheet. Bake at 180C/350F/Gas Mark 4 for about ten minutes or until lightly golden and just firm. Leave until cool before placing on a wire rack to cool. Store in an airtight tin. If you are baking more than one sheet at a time, the one that is placed lower in the oven will take longer to cook. The heat in your oven may be unevenly distributed and it may be necessary to turn the baking sheets around, or carefully rearrange the biscuits to ensure that all are fully cooked.
Oatmeal cookies
1 cup raisins
1/2 cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
1/2 cup chopped walnuts
2 eggs
3/4 cup vegetable oil
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
Bake 10 to 13 minutes in the preheated oven, until the edges are golden.
